A Sweet Thanksgiving

Happy Belated Thanksgiving!

The holiday came and went with a quick rush of wind - honestly! It was a pretty windy week last week. :) But we were able to catch some fun moments with friends and family and celebrate what the Lord has blessed us with this year.

This year we went down to Castle Rock to visit Mr. Wonderful's side of the family. We were in charge of making desserts for the 11 people that would be there, so I got busy earlier in the week with baking.

I wanted to do things a little differently this year. Normally we have pie pie pie for Thanksgiving. I knew I couldn't get too far away from tradition, so we did make an apple pie. I'm not sure what it was this year, but my crust just would not bake! So I put it under the broiler for a few moments and almost instantly it burned! The whole pie, ruined. :( Luckily pie crust is easy to mix up and I had more frozen apple pie mix in the freezer (we always peel, slice and spice apples when we're making applesauce so that we have pies ready to just place in a pie crust and bake... so nice!), so I grabbed another frozen package and threw it in the new crust and tried baking it again. This time I didn't leave the sight of the oven. My eyes were glued to that crust!

With the "pie" part done, I moved on to something a little more daring - cheesecake! And since it was Thanksgiving and fall, how can you not have pumpkin in something?! So this year I made a pumpkin cheesecake. Yum!
And since we were getting together with family, and kids were involved, I thought another good addition to the dessert mix was a chocolate cake! Why not, right?! Also, since we just finished making 80 some quarts of applesauce, I thought why not make a chocolate applesauce cake?? So that's what I did! :) And it turned out delicious! Mr Wonderful iced and decorated it for me... he added some white chocolate shapes... it turned out great! Sorry that I didn't take a picture of the end result. :( I think I was just overly exhausted by the time we were done and got the kitchen cleaned up.


So happy belated Thanksgiving! There is so much to be thankful for this year, for sure!
